Tomato Rice
Ingredients:
- Cooked rice - 2.5 cups
- Tomatoes - 3-4
- Onions - 1
- Green Peas - 1/2 cup (frozen)
- Green Chilies - 2-3
- Mustard Seeds
- Cumin Seeds
- Urad Dhal
- Oil -2-3 spoons
- Pepper Powder
- Chilli Powder
- Turmeric- pinch
- Salt
Method:
- In a kadai heat the oil add the ingredients for tadka (mustard seeds, jeera, urad dhal) let them to splutter then add green chillies and fry
- Add chopped onions fry until golden brown or cooked. To the onions add green peas and fry for a minute.
- Add chopped tomatoes, salt , red chilli powder, turmeric and pepper powder mix well and cook by closing with a lid
- Once the tomatoes are cooked add cooked rice (left over rice can also be used) mix well and cook on low flame for 5 mins.
- Garnish with coriander and serve with Onion Raita.
